Today I left at around
07.10 but due to heavy rain so I consider slow and until much longer I arrived
07:40. our one line around 08.15 before entering the kitchen. We entered the
kitchen around 08.45 we returned one line in the kitchen while waiting for chef
aldino came. At about 09.15 we then divided the practice group (random group
did not fit the blog group) and then we were given directions before the practice
started anything that should be prepared.
Around at 10.00 we
started preparing for practice tomorrow, my group (group of 3) prepare for the
main course. We prepare for beef Stew and baked potato, but the brown stocking
stock has run out while in recipe beef stew we use brown stock, so we make
brown stock. In addition to making brown stock we also prepare for baked potato
but because the potato supply is less than the portion we should use, to cover
the shortage we use sweet potatoes, for the potatoes already in baked today,
while for the sweet potatoes only in peel then soaked in salt water not
blackened then tomorrow morning new in baked.
While waiting for baked
potato and brown stock we prepare for beef, beef cut in the form of cube, onion
and carrot also cut in the form of cube / dice. All the preparations completed
for the main course finished at around 16:00 but while waiting for brown stock
in chill finish at around 17:10. After all the preparations of each section
finished we then started GC without arranging who in which section, and because
today my turn became my CL (classical leader) checklist and garbage, after
checking the temperature of the chiller and throw my kitchen waste GC was
distributed pastry help other friends. GC finished around 18.00 we went home
ba'da Maghrib.
