Assalamualaikum wr.wb
so today me and the group continued the activity yesterday,
after removing the dough from the chiller and starting to roll the dough,
initially the dough was fine, but in the second fold the dough began to break,
and moreover in the third fold, thank God Allah broke the dough once.
but, we continue the dough, finally the dough is not
proofing and the final result is like ordinary bread instead of croissant.
in the end we made the dough again and rested it all night
again and this time only used instant yeast because the sourdough was gone.
